If you run a busy bar, passing trade may be put off by how crowded your bar seems. If potential customers are walking past and the serving areas appears ‘choked’ with customers, they may decide to see where else they can be served more quickly. However, many of those around the bar may not be waiting to be served, but are actually sitting around on stools by the bar.
One solution is to reduce the number of high bar stools at the bar and to create nearby areas of high level ‘poseur’ tables with high stools or high chairs. This means that people occupy smaller amounts of space than traditional tables, keeping the feel of sitting at the bar area whilst freeing up the front of the bar for ease of serving. Passing trade won’t be put off by a heavily congested bar area and will be more likely to make an unplanned visit. This is especially useful for busy town or city centres.
