Recent years have seen several US-inspired food trends that have made American diner furniture relevant in a whole new way.
Far from being a throwback to the 1950s, American diner furniture is now part of a whole new trend for dishes from the continent, such as gourmet hot dogs and barbecue pulled pork.
Now a new addition to menus - mac n cheese - is helping operators to scoop an even bigger profit margin on a simple recipe that offers customers some home comfort, according to foodservice analyst Horizons.
Recipes have been glammed up with toppings offering a mix of textures, as well as extra ingredients in the macaroni cheese itself.
Nicola Knight, analyst at Horizons, said: "Macaroni cheese was once a cheap, comfort food for home cooking but has now become a favourite on menus. It's a huge success story for restaurants and pubs and shows that chefs have returned to some of our old favourites by giving them a new twist with modern ingredients."
Some are even going as far as to serve their macaroni cheese in an unusual way, whether that means inside a burger bun or even in a calzone folded pizza, as well as the traditional generous side portions usually seen on menus.
Depending on the cheese used, mac n cheese can also be vegetarian-friendly, meaning that for once, this is a food trend almost everybody can join in with.
And for those who cannot eat pasta or dairy, there is another emerging trend for potato hash dishes, served with extra ingredients like chorizo or beetroot, while coleslaw is growing in popularity as a side dish with a range of added ingredients providing new variety too.
In all, mac n cheese has clocked up 550% growth on UK menus in the past half-decade, and is now typically priced at about £3-3.50 for a side dish, and up to £6-10 for a main.
Catering for these trends is easy with American diner furniture in the classic red and white upholstered finish, with wipe-clean fabrics that will continue to look great for years to come - whatever the next trend might be.
